cabo cupcakes


phew! what a break from weekendcupcakes!

we spent last week in mexico, so why not some margarita cupcakes?! (thanks for the suggestion, yaya!)

yes, they do have tequila. (cabo wabo, our favorite, to be exact). and yes, they were fab.

long time no cupcakes

wow. its been almost 8 months since i've blogged last. i'm seriously like the.worst.blogger.ever.

ok, so here's some of the cupcake pictures that i managed to scrounge up from the past 8 months. our old laptop went ka-put, so once i retrieve those, i'll add more. so theres not many right now...
but here they are... drum roll please....

these are cupcakes that i made for a breast cancer awareness fashion show. i don't remember how many i made, but i made a sh*t-ton of them. (i think it was about 4 dozen) they were chocolate/strawberry marble cake w/creamycreamcheese frosting or chocolotae frosting though... and then, of course, the cute pink ribbons:



these cupcakes were christmas cupcakes :) (i LOVE holidays, if you can't tell...) these were my yummy pumpkin spice cupcakes (same recipe as the thanksgiving ones last year) with creamycreamcheese frosting. and, i also went ahead and posted pictures of some oreo truffles that i made for christmas as well. they were.to.die.for. (i know there not cupcakes.... but they were sooo delicious, i can't resist posting them)

these were the st patty's day cupcakes that i made for, well, st patty's day. they were chocolate cupcakes w/white chocolate + bailey's filling, and then topped with a mixture of buttercream, whipped cream, and cream cheese frosting. i wanted a super creamy (but still light) "topper" for these fellas. and they were pretty deliche.

these were HAPPYBIRTHDAYKIM!! cupcakes... kim is our wonderful neighbor who has two cute little pups, one thats best buds with tsavo, and one that's best buds with herself :) (she's a little diva at times, but little des is the cutest little yorkie ever!) but kim is a fabulous woman that would celebrate her birthday all month long if she could! (which i totally love, and understand, because i also want to celebrate my birthday all month long too if i could). but she loves lemon bars, and so i made her lemon cupcakes, with lemon pudding filling, with lemon icing. i was going to top it with lemon bars, but silly me forgot to grease the pan. so she go lemon cupcakes, and a pan of lemon sludge that she gets to eat with a spoon :)

so... my new fun thing to do, and a great compromise to jacobs unlovingness towards cupcakes (shocking! i know!!) is a new little creation i made on accident.


i made some red velvet cake the other day and was going to attempt cupcake pops, but considering we dont have a microwave (yet) i couldnt melt the chocolate that was supposed to cover them- and, with my short attention span, i got very frustrated trying to attempt double boiling.


anyways, all it is is cake mixed w/icing and then rolled into balls! they're the perfect size to munch on, and jacob loves them! so he got the naming rights :)


happy birhtday to me (again)

so i didnt make these... but i wish that i did! they were soooo delic!
my awesome friend lauren made these for my birhtday/last night in houston. we ended the night at a mexican food joint and so she made tres leches cupcakes that i drool just thinking about!

so happy birthday to meeee!
my mom got me a whole little kit of stuff to make corn-on-the-cobbie cupcakes. they turned out really cute, but i couldnt get the little corn holders to stick in the sides cuz i forgot about the altitude change (oops). but, here they are none the less!

7-up cake w/cream cheese (surprise, surprise) frosting.

happy birthday to... YAYA

we were down in seguin a few weeks back and i wanted to make yaya some special birthday cupcakes. they turned out pretty cute considering i didn't have anything other than a butter knife!

cocolate w/whipped cream filling & dark chocolate chips. (i totally need to come up with a name for these!)
